Simple but Delicious Gluten Free Plum Cake

A simple gluten free that can be dairy free cake. Just because its healthy it doesn't mean you can eat three slices at once...

Ingredients

12 fresh plums or 300g tinned plums (drained)

125g gluten free self-raising flour

75g ground almonds

1/2 teaspoon of baking powder

100g palm sugar (try less!)

125 g butter (softened) – or coconut oil (softened)

2 eggs

1 tsp vanilla/almond essence (optional)



Method

  • Preheat oven to 150C.

  • Plums – if tinned drain, chop and drain again. If fresh stone them, dice in small pieces.

  • Mix together flour, almonds, baking powder.

  • Cream butter and sugar in a different bowl and beat in eggs. Add almond essence and a bit of the flour mix.

  • Fold in rest of flour mixture.

  • Add in plums.

  • Grease tin and line the bottom, add in mixture and bake for around an hour (sometimes needs another 15 mins) – cover half way through.
