Avocado and Edamame Dip 3 Ways

This is an extra special 3 in 1 recipe. Avocados are obviously super tasty but also high in healthy fats to support brain function and edamame beans are high in protein and provide natural support for hormone regulation.

These versatile ingredients are both delicious and nutritious!

You can try each different version depending on your mood or to accompany a themed meal.

Spicy Guac Style

 
INGREDIENTS

500g frozen shelled edamame thawed

4 ripe avocados

2 cloves garlic minced

(optional 1 jalapeño and ½ red onion)

2 to 3 tablespoons water

½ cup chopped coriander

Salt and freshly ground black pepper to taste

 
METHOD
Put edamame, avocado, garlic, and lime juice in food processor and pulse until combined. Add enough water to make a creamy consistency and pulse again. Pulse until smooth. Transfer edamame guacamole to a serving bowl and season with salt and pepper. Stir. Serve with nacho chips.

 

EdaHummus

 
INGREDIENTS

1 ½ cups frozen shelled edamame thawed

1 medium ripe avocado

2 cloves garlic

Zest and juice of 1 large lemon or one whole preserved lemon

(optional ½ teaspoon onion powder)

3 tablespoons finely chopped fresh thyme or oregano

3 tablespoons olive oil

Salt and pepper to taste

 

METHOD
Put edamame, avocado, garlic, and lemon juice/zest in food processor and pulse until combined. Add fresh herbs, onion powder and olive oil and pulse again. Pulse until smooth. Season with salt and pepper. Stir. Serve with toasted pitta bread or vegetable crudités.

 

Asian-Style EdaUmami Dip

 
INGREDIENTS

2 cups (approx. 12 oz) shelled edamame fresh or frozen

1 large, ripe avocado

1 clove garlic

2-3 tablespoon freshly squeezed lime juice

½ teaspoon freshly grated ginger

¾ teaspoon toasted sesame oil

Tamari or soy to taste

Toasted sesame seeds for topping

Chopped coriander to garnish

 

METHOD
Put edamame, avocado, garlic, ginger and lime juice in food processor and pulse until combined. Add soy or tamari and sesame oil and pulse again until smooth. Top with toasted sesame seeds and chopped coriander. Serve with rice crackers or vegetable crudités.
